Quesada Pasiega- traditional Spanish cheesecake
I have experienced many cheesecakes, all in the name of research of course. However, my favourite is the Spanish cheesecake, or Quesada. One particular tasting up the mountain in Reinosa, Cantabria, stood out from all others. I have managed to recreate this wonderful traditional treat. Beware, very addictive.
Ingredients:
70g butter
1 cup sugar
2 eggs
lemon zest whole lemon
pinch of salt
1 tsp vanilla essence
1/4 tsp cinnamon powder
250 cheese- such as ricotta or cottage cheese
1 cup milk
1 cup flour
Method:
Set fan oven to 175°c
cream softened butter and sugar together in a large bowl
Add eggs and mix
Add lemon zest, salt, vanilla, cinnamon, and cheese. Mix together.
Add milk and mix in
Lastly fold in flour
pour mixture into lined or greased 9” flan dish
place dish in pre heated oven for 35 minutes until lightly browned onto and a knife comes out clean.
allow to cool. You can dust with icing sugar, spread some jam on a slice, top with berries, or just eat plain. Enjoy!
